Whole-custer pressed. Juice kept under inert conditions to preserve certain aromatics - co2 and so2 used on juice.

Fermented in stainless steel at low temperature, using preferred yeast strains.  Racked off of lees at end of primary fermentation, cold stabilized outside over the winter. Fined with bentonite for heat-stability. Crossflow filtered prior to bottling.
