Whole-custer pressed. Racked off of juice lees 24-48 hours after pressing. So2 addition to juice.

Fermented in stainless steel at low temperature, using preferred yeast strains.  Racked off of lees at end of primary fermentation, cold stabilized outside over the winter. Fined with bentonite for heat-stability. Crossflow filtered prior to bottling.
